My 1st ever Le Creuset Cookware

Here is my first ever Le Creuset square ribbed cast iron pan, which I got from Home Goods for the price shown in the picture. It came as is, not in any fancy boxes, nor any instructions. After some quick internet search, it is quite an expensive cookware. I don't know why this pan was sold at this price. Why I like it so much? For one, it is not enameled. Two, it is a Le Creuset. Three, it would my first Le Creuset cookware. Rour, it is also my first square ribbed pan. I am not ture what I will cook with it yet. My brain is boiling up some ideas, such as searings and quick simple indoor bbq.

End of a Quarter for the Holidays

Another quarter came to an end on last Saturday at International Culinary School of Art Institute of Indianapolis. I was blessed that I passed all of my classes. All of us did well. Here is a picture of me and the department director, Chef Marc Aguilera, in Culinary 121 American Regional.
I am really glad to be in a little more advanced kitchen cooking lab this quarter. I got to apply the foundamentals in another class. I was lucky enough to be allowed to use my Chinese chef knife, aka Chinese cleaver. I learned the pros and cons on both this knife and a typical 8" chef knife. Even though I can use both, I would prefer to use my Chinese chef knife becaue of its size, weight, and conviniences. All and all, 3 weeks break from school sounds long, but I'm sure it'll go by fast.
